12 pounds tomatoes, peeled and skin skin removed,
3 12 oz. cans tomato paste
3 Tbs. brown sugar
4 tsp. salt
3/4 C. fresh basil leaves, chopped
1/2 C. fresh oregano, chopped
2 Tbs. fresh rosemary leaves, minced
2 Tbs. fresh marjoram, minced
1 tsp. dried black pepper
1 tsp. red pepper flakes
3 medium onions, chopped
2 whole heads garlic, minced or 4 heaping tablespoons minced garlic
12 pounds tomatoes, peeled and skin skin removed,
3 12 oz. cans tomato paste
3 Tbs. brown sugar
4 tsp. salt
3/4 C. fresh basil leaves, chopped
1/2 C. fresh oregano, chopped
2 Tbs. fresh rosemary leaves, minced
2 Tbs. fresh marjoram, minced

Heat oil in huge pot add onions and garlic. Sauté onions and garlic until tender. Add rest of ingredients. Stirring as you go. Heat to boiling. Reduce heat. Simmer, partially covered for 2 hours. Stir occasionally. After it has simmered, cool completely and store in freezer bags or pint sized jars and seal them as you normally do.
